Set in the waterfront paradise of Ericeira, Europe’s first World Surfing Reserve, Immerso Hotel is a masterclass in pairing architectural innovation with true environmental responsibility. Designed by architect Tiago Silva Dias, the structure is built into the hillside to minimize the ecological and visual impact on the nature reserve. In a village famous for its cultural flair and superb seafood, Immerso’s Emme restaurant ties it all together. Chef Alexandre Silva’s honest, locally sourced dishes highlight the region’s bounty, featuring ingredients that go straight from the hotel’s organic garden and local farms to your plate. And with a zero-waste philosophy—turning biowaste into biogas and featuring furniture built to last—Immerso is redefining what it means to stay sustainably.

Built into the hillside with dark, natural colors, the hotel minimizes ecological and visual impact in the surfing nature reserve. Adapted to local weather conditions, the design emphasizes energy efficiency and harmony with the landscape.

The hotel embraces reusable amenities, repairable items, a waste-conscious menu, and extensive recycling. Leftover food from the kitchen or events is shared with employees, while gardening waste is composted.

Water

Water-saving bathroom equipment was installed, and a well was built to collect runoff, repurposing it for garden irrigation and pool filling.

Energy

Energy

The hotel uses solar panels for water heating, renewable grid energy, electric bikes for guests, and electric and hybrid cars for staff and operations.

Products

Products & Produce

The organic garden provides fresh, seasonal ingredients, complemented by produce from local suppliers. The hotel also hosts events, like sea urchin lunches, to celebrate the region’s best flavors.

Culture

Culture

The hotel offers visits to the Iberian Wolf Sanctuary—where it sponsors a wolf—and live music by local artists on Saturdays. In summer, there are weekly surf-themed movie nights.

Guests can enjoy yoga indoors or outdoors on scenic decks, try bird-watching through partner programs, and visit regional wine estates, with tastings and workshops hosted at the hotel.

The hotel offers an electric for free shuttle service to the town center or paid transportation. There is an accessible room and bathroom, both accessible by elevator.

What is your sustainability philosophy?

We aim to be the benchmark hotel in Ericeira and the region, elevating the quality of our accommodations, experiences, and services. Guided by a deep commitment to sustainability, we carefully choose partners based on their certified products, eco-friendly practices, and local proximity. This allows us to offer traditional, seasonal flavors while also boosting the local economy. Because we don’t just want to be a hotel—we strive to be the hotel that inspires, delights, and creates lasting memories.

How do you forge a connection to the local community and cultural surroundings?

From day one, the hotel has prioritized collaborating with local talents across various fields. A standout example is the partnership with Tiago Pires, the world-renowned surfer deeply rooted in Ericeira, home to his acclaimed surf school. Sharing the same values and vision, Tiago will now serve as one of Immerso’s informal ambassadors—an exciting collaboration sure to benefit the region.

What do you see as the biggest sustainability hurdle for hotels? How are you combating that?

Hotels consume a significant amount of resources—food, water, energy, and materials. It’s crucial to focus not only on reducing this consumption, such as managing food portions and using sensors for water taps and lighting, but also on minimizing waste sent to landfills. This means embracing sustainable practices like composting gardening and food waste, partnering with district companies to convert biowaste into biogas, and investing in durable, repairable furniture.
